3 New Bimber Releases

The amazing Bimber Distillery based in London, England, has gained an impressive reputation in the world of fine spirits due to their award-winning whiskies and meticulous approach to spirit making. The name Bimber itself is Polish for ‘moonshine’ and many of their philosophies are an homage to their rich distilling heritage and celebrate the traditional methods of distilling. While their symbols and beliefs are steeped in history, it’s their modern interpretation and craft-like approach that truly make them stand out.  

As craftspeople, the team at Bimber are dedicated to expanding their portfolio with incredible whiskies and they do so by using a wide variety of wood types in the maturation process. In addition to a collection of popular whiskies already in the US, they have a few new releases that just made their way across the Atlantic in March of 2022. These include Bimber Apogee Blended Malt, Bimber Cask #250/1 Oloroso Finish (a US exclusive!), and Bimber Ex-Bourbon Cask Batch #3. Keep reading to learn more about these whiskies.

 

About Bimber Apogee Blended Malt

Bimber’s Apogee blended malt is a unique 12-year-old, premium “pure malt” whisky that was elevated when it underwent an additional maturation in ex-Bimber casks after being blended. Crafted to celebrate the fine art of blending, this spirit offers an incredible balance of layered, complex flavors. On the nose, you’ll notice hints of spiced pears and oven-baked apricot flans in addition to rosewater, nutmeg, and powdered ginger. The palate opens up with a bright and fresh mouthfeel supported by both stone fruits and lightly charred oak, gentle white pepper, and cooling mint. To finish, you’ll notice lingering ripe and sweet fruits. 

Bimber Distillery spokesperson Matt McKay stated, “Apogee has been created as a response to the burgeoning demand for our products – both as a continually available expression and as an extension of our passion for the fine art of blending.”

 

About Bimber Cask #250/1 Oloroso Finish, USA Exclusive

This USA exclusive spirit was initially matured in ex-bourbon barrels before being finished in an outstanding single oloroso cask, producing only 330 bottles. On the nose this whisky smells of candied pineapple and red berries in addition to licorice sticks and chocolate leavened with baking spice. Upon sipping you'll notice the spirit is richly textured with sweet, stewed fruits which are followed by creamy oak and bright orange peel. To finish, you’ll notice an aromatic spice that is perfectly balanced against lingering sweetness.

 

About Bimber Ex-Bourbon Cask Batch #3

This single malt spirit is matured exclusively in ex-bourbon oak casks and only 5,000 bottles have been released worldwide, with 846 bottles for the USA, making it a small exclusive batch. Every cask that was used was specially selected and the spirit was married together in Bimber’s hand-made oak vat before being bottled. On the nose, this whisky has hints of green apple peels and dried stone fruits along with milk-soaked breakfast cereals. The palate opens up with an impactful combination of bright orchard fruits, baked apricots, and sprightly pepper. To finish, this whisky is described as having lasting sweetness tempered by persistent spicing.
